1. Mashing
In a large brew kettle, combine the pale malt and wheat malt with 6 liters of water. Heat to 152°F (67°C) and maintain this temperature for 60 minutes to convert the starches into sugars.
2. Boiling
After mashing, bring the mixture to a boil. Add the hibiscus flowers, rose hips, citrus zest, and the cinnamon stick. Boil for 60 minutes, stirring occasionally.
3. Cooling and Fermentation
After boiling, cool the wort quickly to around 70°F (21°C). Transfer the cooled wort to a fermentation vessel and pitch the yeast. Seal the vessel and let it ferment in a dark, cool place for about 1-2 weeks.
4. Bottling
Once fermentation is complete, dissolve the priming sugar in a small amount of water and add it to the beer. Bottle the beer and cap the bottles. Let them carbonate for about 1-2 weeks at room temperature.
