Chill and Prepare

1. Chill the Bottle

If the bottle is at room temperature, chill it to serving temperature: place the bottle in an ice bucket filled with ice and water for 20–30 minutes, or refrigerate for 2–3 hours until the liquid reaches about 8–10°C (46–50°F). A wine cooler sleeve can be used for a quicker chill if desired.

2. Prepare Glassware

Select clean white wine glasses (4 glasses suggested). Rinse briefly with cold water and drain to cool the glass slightly. This helps maintain the wine's chilled temperature when poured.

3. Optional Garnishes and Snacks

Arrange lemon or lime wedges and any light snacks (oysters on half shell, fresh goat cheese with herbs, a small green salad or crisp vegetables) on a serving plate. These pair well with the bright, herbaceous profile of Marlborough Sauvignon Blanc.

Open and Serve

4. Open the Bottle

Remove the foil capsule from the bottle neck with a foil cutter or knife. Wipe the top of the bottle with a clean cloth. Use a waiter’s corkscrew or wine opener to remove the cork gently, avoiding agitation to keep the wine fresh.

5. Smell and Inspect

After opening, smell the wine briefly to appreciate the primary aromatics (gooseberry, passionfruit, crushed herbs, citrus). Inspect the color — a pale to medium straw with greenish hints is typical.

6. Pouring

Pour about 120–150 ml (4–5 oz) of wine into each glass, filling roughly one-third to allow room for aromatics. If serving fewer than four, pour larger pours up to 180 ml (6 oz) per glass as desired.

7. Taste and Enjoy

Taste the wine, noting its bright acidity, tropical and citrus fruit flavors, and any herbal or mineral notes. Optionally squeeze a wedge of lemon or lime very lightly over the surface if you prefer a brighter citrus accent, or enjoy plain. Serve with the prepared snacks and replenish glasses as needed.

Storage and Leftovers

8. If not finishing the bottle, re-cork it using the original cork or a wine stopper and store upright in the refrigerator. Consume within 3–5 days for best freshness. Do not freeze. If you used an ice bucket, dry and return to storage.
