Cocktail
1. Prepare cherries
If using fresh Door County cherries, pit 4 cherries. If using jarred, drain and reserve one for garnish. Muddle the 4 cherries in the base of a cocktail shaker until broken down and releasing juice (about 10–15 seconds).
2. Add liquids
To the shaker with the muddled cherries add 2 oz Lalo tequila blanco, 0.5 oz Cointreau, 0.75 oz fresh lime juice, and 0.5 oz agave syrup.
3. Shake
Fill the shaker with ice (about 1 cup), secure the lid, and shake vigorously for 12–15 seconds until the outside of the shaker is frosty and well-chilled.
4. Double strain
Double-strain the cocktail into a rocks glass filled with fresh ice using a Hawthorne strainer and a fine mesh strainer to remove cherry solids and any ice shards.
Garnish & Finish
5. Optional: If you want a rim, rub a lime wedge around the glass lip and dip into coarse salt or Tajín. Thread a Door County cherry onto a cocktail pick and place it on the rim or float it on top of the drink. Add a lime wheel or wedge on the rim. Serve immediately.
