Prepare Snails (if using live) or Prepped Escargot

Purge and clean (live snails only)

If using live garden snails, purge them by keeping snails in a ventilated container with a sprinkle of cornmeal or flour for 24–48 hours (no food) to clear their digestive tracts. Rinse thoroughly under cold running water, then blanch in a pot of salted boiling water for 2–3 minutes. Remove, cool slightly, then extract snail meat from shells using a small skewer. Reserve any cooking liquid. If using canned escargot, skip this step and drain, rinse once in warm water, and pat dry.

Trim snail meat if needed and set snails aside in a bowl. Reserve about 50 ml of snail cooking liquid (or use extra white wine) to add depth to the sauce later.

Make Garlic-Parsley Butter

Melt butter and sweat aromatics

In a small skillet over medium-low heat, melt 6 tbs unsalted butter. Add the minced garlic and minced shallot and sweat gently for 2–3 minutes until fragrant and translucent but not browned.

Add chopped parsley, lemon zest, lemon juice, and the reserved snail cooking liquid (or 2 tbs additional white wine) to the butter. Stir and cook for 1 minute to combine flavors. Remove from heat and season with 1 tsp sea salt and 1/2 tsp freshly ground black pepper. Taste and adjust salt/acid as needed. Keep the butter warm; do not let it boil.

Cook Snails

Increase skillet heat to medium-high. Add the prepared snail meat to the skillet and pour in the white wine. Sauté snails for 2–3 minutes, turning so they heat through and absorb the wine. If the snails were already cooked (canned), simply warm through for 1–2 minutes.

Pour the warm garlic-parsley butter over the snails and stir to coat. Allow the butter to bubble gently for 30–60 seconds so flavors meld, then remove from heat.

If using escargot shells or escargot plates, transfer one snail into each shell or dish, spoon 1 tbs of the garlic-parsley butter over each, and arrange on a baking sheet. If not using shells, serve snails directly from the skillet with additional butter spooned on top.

Finish and Serve

Optional: Preheat broiler to high. Place the filled escargot plates or baking sheet under the broiler for 1–2 minutes until the butter is bubbling and just beginning to brown at the edges — watch carefully to prevent burning.

Toast baguette slices in a skillet with 1 tbs butter or under the broiler until golden. Arrange snails on a serving plate, garnish with additional chopped parsley or microgreens, and serve immediately with toasted bread to soak up the garlic-parsley butter.
