Prepare filling

Melt and combine

Preheat your oven to 375°F (190°C). In a small saucepan over low heat, melt the unsalted butter gently. Add the finely chopped lardo and cook for 1–2 minutes, stirring, until the lardo softens and releases some fat but does not fully render to crisp. Remove from heat.

To the melted butter and lardo, stir in the minced garlic, chopped parsley (reserve 2 tablespoons for garnish), lemon juice, grated Parmesan (if using), kosher salt and black pepper. Mix until homogenous. Taste and adjust seasoning — it should be bright, garlicky and slightly salty to balance the escargots.

Prepare panko topping

In a small skillet over medium heat, warm 2 tablespoons olive oil. Add panko breadcrumbs and toast, stirring frequently, until golden and crisp, about 3–4 minutes. Stir in smoked paprika and lemon zest during the last 30 seconds. Remove from heat and let cool slightly.

Once cooled, fold 2 tablespoons of the parsley reserved earlier into the panko mixture so the crumbs carry herb brightness.

Assemble escargots

If using shells, rinse and pat them dry. Place shells or mini gratin dishes on a baking sheet. Put one escargot into each shell or dish.

Spoon about 1 teaspoon of the lardo-garlic-parsley butter mixture over each escargot so it is well coated. If you have extra butter, distribute evenly among pieces. The goal is that each snail sits in a small puddle of flavored butter.

Top each snail with approximately 1 teaspoon of the toasted panko mixture, pressing gently so it adheres to the butter layer.

For a touch of BBQ brightness, lightly drizzle about 1/4 teaspoon of the thin BBQ sauce over each panko-topped escargot (reserve remaining sauce to finish after baking).

Bake and finish

Place the baking sheet in the preheated oven and bake until the butter is bubbling and the panko is golden, about 8–10 minutes. If using larger gratin dishes, bake 10–12 minutes. Watch closely to avoid burning the panko.

Meanwhile, in a small saucepan over medium heat combine the remaining BBQ sauce and white wine (or water). Warm gently, stirring, for 1–2 minutes to loosen and thin the sauce.

When escargots are done, remove from oven. Quickly spoon a few drops (about 1/4 teaspoon) of the warmed BBQ glaze onto each snail, then sprinkle with the remaining chopped parsley. Serve immediately with lemon wedges on the side.
