Method
Chocolate mousse
Prepare a double boiler
Set a heatproof bowl over a saucepan with an inch or two of simmering water (water should not touch the bowl). Keep water at a gentle simmer.
Place chopped bittersweet chocolate and butter in the heatproof bowl. Stir occasionally until fully melted and smooth, then remove bowl from heat and let chocolate cool for 3–5 minutes (should still be fluid but not hot).
While chocolate cools, whisk the egg yolks and 20 g of the granulated sugar in a small bowl until pale and slightly thickened (about 1–2 minutes). Stir the yolk mixture into the warm melted chocolate until combined and smooth. Add a pinch of salt and set aside to cool to lukewarm.
In a very clean bowl, beat the egg whites with an electric mixer to soft peaks. Gradually add the remaining 20 g granulated sugar and continue beating to glossy stiff peaks (but not dry).
Divide the mousse among 6 serving glasses or ramekins (about 6–8 oz / 180–250 ml each). Smooth tops, cover, and chill in the refrigerator for at least 2 hours, preferably 3–4 hours, to set.
Chantilly (sweet whipped cream)
Chill a metal mixing bowl and beaters in the freezer for 10–15 minutes — cold equipment helps the cream whip faster.
Pour the cold heavy cream into the chilled bowl. Add powdered sugar and vanilla. Whip on medium-high speed until soft to medium peaks form (peaks hold but still have a soft tip). Taste and adjust sweetness to preference. Keep chilled until ready to assemble.
Just before serving, pipe or spoon a generous dollop of Chantilly onto each chilled mousse portion.
Pecan nuts and garnish
For candied pecans (optional): after butter foams, sprinkle the brown sugar over the nuts and continue stirring until sugar melts and coats the pecans, 1–2 minutes. Immediately transfer to a sheet of parchment to cool and separate.
