Prepare and toast bread

Brush both sides of the sourdough slices lightly with olive oil (about 1 tbs total). Optionally spread 1 tsp softened butter on one side for extra flavor. Toast in a skillet over medium-high heat for 2–3 minutes per side until golden-brown and crisp, or use a toaster/oven on 375°F (190°C) for 5–7 minutes, flipping once. Remove and set aside on a cutting board.

Prep the avocado

Halve the avocado, remove the pit, and scoop flesh into a small bowl.

Mash and season

Add 1 tsp lemon juice, 1 tsp sea salt, 1 tsp black pepper, and 1/4 tsp red pepper flakes (if using) to the avocado. Mash with a fork until mostly smooth but slightly chunky. Taste and adjust lemon, salt or pepper to preference.

Assemble & garnish

Spread avocado

Divide the mashed avocado evenly between the two toasted bread slices and spread to the edges with the back of a spoon.

Add toppings

Top each toast with halved cherry tomatoes (3 per slice), a small handful (~2 tbsp) of microgreens or arugula, and sprinkle 1/4 tsp everything bagel seasoning across both slices.

Finish and serve

Sprinkle a pinch (about 1/8–1/4 tsp) flaky sea salt and a light dusting of freshly ground black pepper over each toast. Serve immediately while the toast is still slightly warm.
