Preparation
Prepare the Puff Pastry
Preheat your oven to 220°C (428°F). Roll out the puff pastry sheet on a lightly floured surface to fit your baking tray. Place the rolled pastry onto the tray and prick it gently with a fork to prevent bubbling.
Cook the Bacon
In a skillet over medium heat, cook the smoked bacon until crispy. Remove and let cool, then chop into small pieces.
Prepare the Topping Mixture
In a bowl, combine the crème fraîche and ricotta cheese. Season with salt and black pepper to taste.
Assemble the Tart
Spread the crème fraîche and ricotta mixture evenly over the puff pastry. Top with the caramelized onions and chopped bacon, then sprinkle with fresh parsley.
Baking
Bake the Tart
Bake in the preheated oven for about 15-20 minutes or until the pastry is golden brown and puffed up.
Serve
Remove from the oven, let cool slightly, and slice into squares or wedges to serve warm.
