Sauté the Vegetables
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the onion and garlic, and sauté until translucent, about 5 minutes.
Cook the Eggplant
Add the diced eggplant to the skillet and cook for 5-7 minutes until slightly softened.
Add Zucchini and Bell Peppers
Stir in the zucchini and bell peppers, cooking for another 5 minutes.
Add Tomatoes
Add the diced tomatoes to the skillet, season with salt and pepper, and stir well. Reduce the heat to low and cover, allowing to simmer for 20-25 minutes, stirring occasionally.
