Chocolate Sponge Layers

Preheat and prepare pans

Preheat oven to 350°F (175°C). Grease two 8-inch round cake pans and line the bottoms with parchment paper. Lightly flour the sides.

Whisk together dry ingredients: in a large bowl sift or whisk the all-purpose flour, cocoa powder, baking powder, baking soda, salt, and granulated sugar until evenly combined.

Combine wet ingredients: in a separate bowl whisk eggs, buttermilk, warm water, vegetable oil, and vanilla extract until smooth.

Make batter: pour the wet mixture into the dry ingredients and whisk until combined and smooth, scraping the bowl once. The batter will be fairly thin from the warm water.

Divide and bake: pour batter evenly between the prepared pans (use a kitchen scale if possible to ensure even layers). Bake in the preheated oven for 25–30 minutes or until a toothpick inserted near center comes out with a few moist crumbs and the tops spring back when touched.

Cool: remove pans to a wire rack. Let cakes cool in pans 10 minutes, then run a knife around edges, invert onto racks, remove parchment, and let cool completely (about 1 hour) before assembling.

Warm Espresso Cream (filling/soak)

Brew espresso: while the cakes bake or cool, brew 1 cup of very strong espresso (or very strong coffee). Keep hot.

Make espresso cream: in a small saucepan combine the heavy cream, granulated sugar, and instant espresso powder. Warm over medium-low heat, stirring, until the sugar dissolves and the mixture is hot but not boiling (do not simmer aggressively). Remove from heat and whisk in the hot brewed espresso. Taste and adjust sugar if desired. Keep the espresso cream warm or at room temperature; it will be used to brush and lightly soak the cake layers before filling.

Chocolate Ganache (frosting)

Heat cream: place chopped bittersweet chocolate in a medium heatproof bowl. In a small saucepan, heat the 1.25 cups heavy cream with unsalted butter and corn syrup until it just begins to steam and small bubbles form at the edge (do not boil).

Make ganache: pour the hot cream mixture over the chopped chocolate. Let sit 1–2 minutes, then whisk gently from center outward until smooth and glossy. If any unmelted pieces remain, microwave in 10-second bursts and stir until fully melted. Let the ganache cool and thicken at room temperature, stirring occasionally, until spreadable but still pourable (about 20–30 minutes).

If you prefer a firmer frosting, chill ganache briefly (10–15 minutes) and then whisk to a spreadable consistency.

Assembly & Finishing

Level cakes: if the cake layers have domed tops, use a serrated knife to level them so they stack evenly.

Soak bottom layer: place one cake layer on a serving plate or cake board. Using a pastry brush, liberally brush warm espresso cream over the top of the first layer (about 3–4 tablespoons), allowing the liquid to soak in; do not oversaturate. Reserve remaining espresso cream to brush between layers and on top if desired.

Add ganache filling: spoon or pipe a generous layer (about 1/3 of the ganache) onto the soaked bottom layer and spread evenly, leaving a small 1/4-inch border to prevent squeeze-out when stacking.

Stack and repeat: place the second cake layer on top. Brush the top layer lightly with more warm espresso cream (about 2 tablespoons) if desired. Spread remaining ganache over the top and allow a small amount to drip naturally down the sides for a rustic finish, or smooth the sides with an offset spatula for a cleaner look.

Chill gently: refrigerate the assembled cake 15–20 minutes to set the ganache slightly and make it easier to handle for decoration.

Apply final touches: once the ganache is set but not cold, dust the top center lightly with the coarse cocoa powder. Using clean, dry tweezers or a small brush, apply small pieces of edible gold leaf to the top surface and along a few edges as an accent. Work carefully — gold leaf is delicate and best applied just before serving.

Bring to serving temperature: remove cake from refrigerator about 20–30 minutes before serving so the ganache and espresso cream are pleasantly warm/mellow. Slice with a hot, clean knife for neat slices.
