Wine Preparation
1. Chill to serving temperature
Place the bottle of Chakana Atorrante Malbec in the refrigerator or an ice bucket for 20–30 minutes before serving. Aim for a serving temperature of about 16–18°C (60–65°F): slightly cool but not cold to let the fruit and spice character show.
2. Inspect and open
Wipe the bottle with a clean, damp cloth or run a small amount of water around the neck and wipe dry to remove dust. Remove the capsule with a knife or foil cutter, position the corkscrew in the center of the cork, and extract the cork slowly and steadily to avoid agitation.
3. Optional decanting
If the bottle is older than 6–8 years or you want to soften tannins and aerate the wine, gently pour the Malbec into a decanter. Hold the bottle over the decanter and pour in a steady stream until about 1–2 cm from the bottom of the bottle. Let the wine sit in the decanter for 30–60 minutes before serving. For younger wines, a 10–20 minute rest after opening is usually sufficient.
4. Rinsing glassware (optional)
Pour a small splash (about 1–2 tablespoons) of the Malbec into each glass and swirl, then discard. This warms the glass slightly and allows you to check aroma. Alternatively, rinse glasses with cool water and dry with a lint-free cloth.

5. Using large-bowled red wine glasses, pour approximately 4–6 ounces (120–180 ml) per serving, filling the glass to about one-third to allow swirling and aroma concentration. Hold the glass by the stem when serving to avoid warming the wine with your hand.
6. Serve the Chakana Atorrante Malbec alongside the prepared pairings or as a stand-alone tasting. Encourage guests to swirl gently, inhale the aromas, and taste, noting typical Malbec characteristics such as ripe dark fruit (blackberry, plum), floral hints, cocoa or chocolate notes, and ripe tannins.
7. If the wine is in a decanter, re-taste after 15 and 45 minutes to observe how aeration changes the nose and palate. Replenish glasses as needed; reseal and refrigerate any open bottle to slow oxidation if you expect to keep unfinished wine more than a day.
Suggested Pairings (optional)
8. Cheese & Charcuterie: Arrange sliced aged cheese and cured meats on a board. The savory, salty, and nutty flavors of aged cheeses and the fat from cured meats will complement the Malbec's fruit and tannin structure.
