Clean mussels

Rinse mussels under cold running water. Discard any with cracked shells. Remove beards by tugging firmly; use a paring knife if needed. Tap any open mussels — discard those that don't close within 30 seconds.

Prepare aromatics

In a large heavy-bottomed pot or Dutch oven over medium heat, add olive oil and 1 tablespoon butter. Once shimmering, add the chopped shallots and sauté 2–3 minutes until softened and translucent but not browned. Add the minced garlic and sauté 30–45 seconds until fragrant.

Build the broth

Add the diced tomato, bay leaf, and thyme sprigs to the pot and cook 2 minutes to release flavors. Pour in the white wine and stock, increase heat to medium-high, and bring to a gentle boil. Let the liquid reduce by about 20% (about 3–4 minutes) to concentrate flavor. Season with the salt and half of the black pepper.

Cook mussels

Add the cleaned mussels to the boiling broth, cover tightly with a lid, and steam for 4–6 minutes, shaking the pot gently once or twice during cooking. Check after 4 minutes: most mussels should have opened. Continue until all (or almost all) are open. Discard any mussels that remain tightly closed.

Finish the sauce

Remove the pot from heat. Discard the bay leaf and thyme stems. Stir in the remaining 1 tablespoon butter and the chopped parsley to enrich and slightly thicken the broth. Taste and adjust seasoning with remaining black pepper and additional salt if needed. Squeeze a little lemon juice into the broth for brightness, if desired.

To Serve

While mussels cook, preheat broiler. Arrange baguette slices on a baking sheet, spread optional garlic butter on each slice, and broil 1–2 minutes until golden at the edges (watch carefully to avoid burning).

Ladle mussels and plenty of broth into deep bowls. Scatter extra chopped parsley over the top and serve with lemon wedges and the toasted baguette on the side for dipping. Encourage guests to use the fork to pry mussels from shells and soak up the broth with bread.
