Method

Preparation

1

Clean the Clams

Rinse the clams under cold water to remove any sand or grit. Soak them in a bowl of fresh water for 20-30 minutes to allow them to purge any remaining sand.

2

Mince Garlic

Peel and finely mince the garlic cloves. Set aside.

3

Chop Parsley

Rinse the fresh parsley, shake off excess water, and chop it finely. You will need about 1/4 cup of chopped parsley for the dish.

Cooking

4

Sauté Garlic

In a large pot or skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant but not browned.

5

Add Clams and Wine

Add the cleaned clams to the pot, followed by the white wine. Stir to combine, and cover the pot with a lid.

6

Cook Clams

Allow the clams to steam for about 5-7 minutes, or until they have opened up. Discard any clams that remain closed.

7

Add Butter and Seasoning

Once the clams are cooked, add the butter, chopped parsley, red pepper flakes, salt, and black pepper. Stir gently to combine and let the butter melt.

8

Serve

Transfer the clams and broth to a serving dish. Garnish with additional parsley if desired. Serve hot with crusty bread.
