In a small bowl, combine warm water, brown sugar, and active dry yeast. Let it sit for about 5-10 minutes until it becomes frothy.

Activate the Yeast

In a large mixing bowl, combine the flour and salt. Once the yeast mixture is frothy, pour it into the flour mixture. Mix until a dough forms.

Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

Place the dough in a greased bowl, cover it with a kitchen towel, and let it rise for about 1 hour, or until it doubles in size.

Let it Rise

Preheat the oven to 450°F (230°C). Once the dough has risen, punch it down and divide it into small pieces (about 1 inch each). Roll each piece into a ball.

Shape the Pretzel Bites

In a large pot, bring 10 cups of water to a boil and add baking soda. Boil each pretzel bite for about 30 seconds, then remove and place on a baking sheet.

Brush each pretzel bite with beaten egg and sprinkle with coarse sea salt. Bake in the preheated oven for 12-15 minutes until golden brown.

Egg Wash and Bake

In a medium bowl, combine the shredded sharp cheddar cheese, softened cream cheese, beer, garlic powder, onion powder, mustard, and black pepper.

Mix the Ingredients

Use a hand mixer or food processor to blend the mixture until it is creamy and smooth. Adjust the seasoning with hot sauce to taste.

Blend Until Smooth

Transfer the beer cheese into a serving bowl and serve with the warm pretzel bites.
