Prepare liver

Trim and soak

Trim any visible membranes, sinew, or large connective pieces from the liver slices. Place the trimmed liver in a shallow bowl and cover with 1 cup milk (or buttermilk). Soak for 20–30 minutes in the refrigerator to mellow flavor and tenderize. Drain and pat dry with paper towels right before dredging.

Season and flour

Combine 1 cup all-purpose flour, 1.5 tsp kosher salt, 1 tsp black pepper, 1/2 tsp garlic powder and 1/2 tsp paprika in a wide shallow dish. Dredge each patted-dry liver slice in the seasoned flour, shaking off excess. Reserve the remaining flour mixture for later use in thickening if needed.

Cook onions and make gravy base

Heat a large skillet (10–12 inch) over medium heat. Add 3 tbsp unsalted butter and 1 tbsp vegetable oil. When butter is melted and bubbling, add the thinly sliced onions. Cook onions, stirring occasionally, until softened and deeply translucent, about 12–15 minutes. If onions begin to brown too quickly, reduce heat to medium-low.

Add 2 minced garlic cloves to the onions and cook 30–45 seconds until fragrant. Remove about half of the cooked onions to a bowl and set aside — these will be used as topping to keep some texture in the finished dish. Leave remaining onions in the skillet as the base for the gravy.

Pour in 2 cups beef broth and 1 tsp Worcestershire sauce into the skillet with the remaining onions and bring to a gentle simmer. If using brown gravy mix, whisk it into the simmering liquid now until dissolved. If using flour roux instead: sprinkle 2 tbsp reserved seasoned flour over the fat in the skillet and stir for 1 minute to cook the flour, then slowly whisk in the beef broth until smooth and simmering. Keep the gravy at a very low simmer while you cook the liver.

Pan-fry liver

In a second large skillet, or after transferring the gravy to a small saucepan and keeping warm, heat 1 tbsp vegetable oil and 1 tbsp butter over medium-high heat. When the fat is hot and shimmering (but not smoking), add the floured liver slices in a single layer without crowding; work in 2 batches if necessary.

Cook the liver slices 1.5–2 minutes per side for medium (edges will set and centers slightly pink). Avoid overcooking — liver becomes tough quickly. Use tongs to flip gently. Transfer cooked slices to a plate and tent loosely with foil while you finish the remaining slices.

Finish smothering and assemble

Return all cooked liver slices to the skillet with the warm gravy and onions (or place liver in the skillet used for gravy, pour gravy over). Spoon some of the reserved soft onions on top. Gently simmer the liver in the gravy over low heat for 2–3 minutes to marry flavors and finish cooking. Taste gravy and adjust seasoning with a pinch of salt and pepper if needed.

Sprinkle 2 tbsp chopped fresh parsley over the smothered liver for color and fresh flavor. If gravy is too thin, mix 1 tsp cornstarch with 1 tbsp cold water and whisk into simmering gravy, cook 1–2 minutes until thickened. If gravy is too thick, thin with up to 1/2 cup additional beef broth.

Warm the prepared mashed potatoes and steamed green beans or peas while the liver simmers.

Plate: spoon 1 cup mashed potatoes onto each plate, place 4 oz (about 2–3 slices) of smothered liver over or beside the potatoes, and ladle extra onion gravy over the liver and potatoes. Serve with 1/2 cup green beans or peas on the side.
