Soak beans (optional but recommended)
Place 1 cup dried red beans in a bowl and cover with 3 cups cold water. Soak 4–8 hours or overnight. Drain and rinse before cooking. If short on time, use the quick soak: cover with 3 cups water, bring to a boil 2 minutes, remove from heat, cover and let sit 1 hour, then drain and rinse.
Sauté vegetables and sausage
Heat 1 tablespoon olive oil in a medium pot over medium heat. Add 150 g sliced smoked sausage and cook 3–4 minutes, stirring, until browned at the edges. Add 1/2 cup diced onion, 1/4 cup diced celery, 1/4 cup diced green bell pepper and cook 3–4 minutes until softened. Add 1 minced garlic clove and cook 30 seconds until fragrant.
Simmer beans
Add the drained beans to the pot with the vegetables and sausage. Pour in 3 cups low-sodium chicken or vegetable stock. Stir in 1 bay leaf, 1/4 teaspoon dried thyme, 1/4 teaspoon smoked paprika, 1/2 teaspoon salt, 1/4 teaspoon black pepper and 1/16 teaspoon cayenne (optional, for mild heat). Bring to a gentle boil, then reduce heat to low, cover partially, and simmer gently for 1 to 1 1/4 hours, stirring occasionally, until beans are tender and liquid has thickened slightly. If beans become dry before tender, add up to 1/2 cup hot water or stock.
Adjust texture for child-friendly bowl
Once beans are tender, remove bay leaf. For a creamier, child-friendly texture, mash about one-third of the beans against the side of the pot with the back of a spoon, or use an immersion blender for 10–15 seconds to partially purée. Taste and adjust seasoning with additional salt or pepper if needed (add sparingly to keep sodium moderate). Keep warm on the lowest heat setting while preparing rice.
Rice
Rinse 1 cup long-grain white rice under cold water until the water runs mostly clear to remove excess starch. Drain well.
In a small saucepan, combine the rinsed rice, 1 3/4 cups water, 1/4 teaspoon salt, and 1 teaspoon butter. Bring to a boil over medium-high heat, then reduce heat to low, cover tightly, and simmer 15 minutes without lifting the lid.
After 15 minutes, remove from heat and let rice rest, covered, for 5 minutes. Fluff with a fork.
Assembly & Garnish
Divide the cooked rice between two child-sized bowls (approximate serving size below). Spoon the red beans and sausage over the rice, using about half to three-quarters beans-to-rice ratio depending on child preference. For younger children, use more mashed beans to reduce choking risk.
Finish each bowl with a light sprinkle of 1 tablespoon chopped green onions (use only the white and light green parts for a milder flavor) and 1 teaspoon chopped parsley if desired. Let cool slightly to a warm, safe temperature before serving.
