Make a dark roux

In a large heavy-bottomed Dutch oven or pot set over medium-low heat, add the vegetable oil and butter. Once butter is melted and shimmering, gradually whisk in the flour to combine. Stir constantly with a wooden spoon or heatproof spatula, scraping the bottom, until the roux reaches a chocolate-brown color (about 25–35 minutes). Reduce heat if it browns too quickly. The darker the roux, the deeper the gumbo flavor; be patient and don’t burn it.

When the roux is a deep brown (similar to chocolate), immediately and carefully add about 1 cup of the chicken stock while whisking vigorously to loosen the roux into a smooth paste. Once incorporated, slowly whisk in the remaining stock and optional beef/dark chicken stock until fully combined and smooth. Increase heat to medium and bring the mixture to a gentle simmer.

Brown the chicken and sausage

While making the roux (or in a separate skillet), pat chicken thighs dry and season lightly with 1/2 tsp kosher salt and 1/4 tsp black pepper. In a medium skillet over medium-high heat, add 1 tsp vegetable oil and brown the chicken thighs 3–4 minutes per side until golden (they will finish cooking in the gumbo). Remove and set aside. In the same skillet, brown the sliced andouille sausage 2–3 minutes until edges are browned; remove and set aside with chicken.

Once the gumbo base (roux + stock) is simmering and has a smooth consistency, add the browned chicken (whole thighs) and browned sausage to the pot.

Cook vegetables

After adding the proteins to the simmering roux/stock mixture, stir in the diced onion, green bell pepper, and celery (the Holy Trinity). Add the minced garlic and the white portions of the sliced green onions. Stir to combine. Reduce heat to low–medium so the vegetables soften without losing the roux’s color, and simmer gently for 20–25 minutes until vegetables are tender and flavors meld.

Seasoning & Extras

Season and simmer

Add the bay leaves, dried thyme, dried oregano, smoked paprika, Cajun/Creole seasoning, remaining 1 tsp kosher salt (adjust to taste), remaining black pepper, Worcestershire sauce, and optional hot sauce. Stir and simmer gently, partially covered, for 25–30 minutes so chicken finishes cooking through and flavors deepen. If the gumbo becomes too thick, add up to 1 cup additional stock or water to reach desired consistency.

After simmering, remove chicken thighs to a cutting board, discard bones and skin if present, shred or chop the meat into bite-sized pieces, then return the chicken to the pot. Taste and adjust seasoning (salt, pepper, or hot sauce) as needed.

Finish and serve

If using file powder, stir 1 tsp into the gumbo off the heat to avoid gummy texture (alternatively sprinkle individual bowls). Stir in the chopped green parts of the scallions and chopped parsley, plus the optional lemon juice for brightness. Simmer 2–3 more minutes to meld. Remove bay leaves before serving.

Serve gumbo hot over cooked white rice (about 1 cup rice per serving) and garnish with additional sliced green onions, parsley, and hot sauce on the side.
