Prepare the Frites

Wash and peel the Russet potatoes, then cut them into thick fries. Rinse in cold water and pat dry.

Fry the Potatoes

In a large pot, heat vegetable oil to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 4-5 minutes per batch. Remove and drain on paper towels. Season with salt.

Make the Gravy

In a saucepan, melt the butter over medium heat. Add the flour and whisk continuously for about 2 minutes to create a roux. Gradually add the chicken broth while whisking to prevent lumps. Stir in garlic powder, onion powder, salt, and black pepper. Simmer until thickened, about 5-7 minutes.

Assemble the Poutine

On a plate, layer the hot frites, generously pour over the chicken gravy, and top with Shtayburne Farms cheese curds. Garnish with sliced scallions before serving.
