Harvest the Blaüfrankisch grapes at their peak ripeness. Remove any stems and leaves, keeping only the fruit.

Crush the grapes in a clean container to release the juice. You can use a wine press or do this by hand.

Transfer the crushed grapes, including skins, into a fermentation vessel. Add the yeast and mix well.

Dissolve the sugar in the water and add it to the fermentation vessel. This will help in the fermentation process.

Cover the fermentation vessel with a cloth and let it sit in a dark, warm place for about 7-14 days. Stir daily.

After fermentation, press the mixture to separate the wine from the solids. Use a wine press or a clean cloth to squeeze out the liquid.

Transfer the wine to a clean, sanitized aging container. Age for at least 6 months to develop flavors.

Once aged, siphon the wine into clean bottles, leaving some space at the top. Seal with corks.
