Method
Focaccia Preparation
Activate Yeast
In a small bowl, mix warm water and active dry yeast. Let sit for 5-10 minutes until frothy.
Make Dough
In a large bowl, combine flour and salt. Add the yeast mixture and olive oil. Mix until a sticky dough forms.
Knead Dough
Turn the dough onto a floured surface and knead for 5-7 minutes until smooth.
First Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.
Shape and Second Rise
After rising, punch down the dough and transfer it to a greased baking sheet. Stretch it into a rectangle and dimpling the surface. Let it rise for another 30 minutes.
Add Toppings
Preheat the oven to 425°F (220°C). Top the dough with seasonal toppings and sprinkle with coarse sea salt.
Bake
Bake for 20-25 minutes or until golden brown. Let cool before slicing.
Cultured Butter Preparation
Mix Ingredients
In a bowl, combine softened butter, cultured buttermilk, and sea salt. Whip until creamy and smooth.
Chill
Transfer to a container and refrigerate for at least 30 minutes before serving.
