Carefully harvest the Blaufränkisch grapes from the vineyards near Seneca Lake.

Crush and destem the grapes to release their juice into a fermentation vessel.

Add the measured water and sugar to the grape juice.

Sprinkle the yeast over the mixture and allow it to sit for 15 minutes before stirring.

Cover the fermentation vessel and let it sit at a controlled temperature for 7-14 days, stirring daily.

Once fermentation is complete, press the mixture to separate the liquid from the solids.

Add tannin and sulfur dioxide to the wine to stabilize it.

Transfer the wine to oak barrels and allow it to age for 6-12 months.

Once aged, bottle the wine and let it rest for an additional 3-6 months before serving.
