Grilled Branzino Directions
1. Prepare the Branzino
Clean the branzino fish, removing any scales and innards. Pat dry with paper towels. Make 3 diagonal cuts on each side of the fish, and rub olive oil, salt, and black pepper all over the fish, including inside the cuts.
2. Prepare the grill
Preheat the grill to medium-high heat. Oil the grill grates to prevent sticking.
3. Stuff the fish
Insert lemon slices into the cavity of each branzino for additional flavor.
4. Grill the fish
Place the fish on the grill and cook for about 6-8 minutes on each side, or until the skin is crispy and the flesh is opaque.
5. Prepare the chickpea salad
In a bowl, combine chickpeas, cherry tomatoes, diced jalapeño, and chopped cilantro. Drizzle with olive oil, and season with salt and pepper to taste. Mix well.
6. Serve
Once the branzino is cooked, remove it from the grill and serve with the chickpea salad on the side.
