Package the coffee
Seal the 250 g Lavazza ground coffee in its original bag or repack into an airtight, food-safe bag. Place a label with roast and tasting notes on the bag if available.

Brewing instructions note
Include simple brewing instructions on a card: recommended coffee-to-water ratio 1:15 by weight (e.g., 16 g coffee to 240 ml water), water temperature 92–96°C, brew time depending on method (espresso, pour-over, French press).

Prepare beurre noisette (brown butter)
In a small saucepan, melt 150 g unsalted butter over medium heat. Continue cooking, swirling occasionally, until the milk solids turn golden brown and you smell a nutty aroma (3–5 minutes). Remove from heat and strain into a bowl to stop cooking. Let cool to warm (not cold).

Bake
Brush financier molds with melted butter or spray with nonstick spray. Fill each mini mold about two-thirds full. Bake on the center rack for 10–14 minutes until edges are golden and the tops spring back. Remove, let cool 5 minutes in the mold, then unmold onto a wire rack to cool completely.

Storage
Once cooled, store financiers in an airtight container at room temperature for up to 3 days or freeze for longer storage.

Infuse milk
In a saucepan, combine 500 ml whole milk, 50 g unsalted butter, and the split vanilla bean (or 1 tsp vanilla extract). Heat until just simmering, then remove from heat and let steep for 15 minutes if using a bean. Remove the vanilla pod (scrape seeds back into the milk if used).

Make batter
In a bowl, whisk together 200 g granulated sugar and 125 g all-purpose flour. In a separate bowl, whisk 2 whole eggs and 2 egg yolks. Gradually whisk the warm milk mixture into the eggs, then whisk the milk-egg mixture into the dry ingredients until smooth. Stir in 2 tbs dark rum. Cover and refrigerate the batter for at least 12 hours (preferably 24 hours) to hydrate and develop flavor.

Bake cannelés
Remove batter from fridge and stir. Preheat oven to 220°C (430°F). If using copper molds, butter them well; if silicone, spray lightly. Fill molds nearly to the top. Bake at 220°C for 15 minutes, then reduce temperature to 180°C (355°F) and bake for another 45–55 minutes until deep mahogany and caramelized on the exterior with a tender custardy interior. Remove from molds and cool on a rack.

Storage
Cannelés are best eaten the day they are made for maximum crust. Store in an airtight container at room temperature for 1–2 days; crisp them briefly in a hot oven to refresh crust if needed.
Flourless Raspberry Cake

Prepare pan and preheat
Preheat oven to 175°C (350°F). Butter a 9-inch springform pan and line the bottom with parchment paper.

Melt chocolate and butter
Gently melt 200 g chopped dark chocolate and 175 g unsalted butter together in a heatproof bowl over simmering water (double boiler) or in short bursts in the microwave, stirring until smooth. Let cool slightly.

Make cake batter
Whisk 150 g granulated sugar with a pinch of salt into the melted chocolate mixture. Add 4 whole eggs one at a time, whisking until smooth and slightly glossy. Sift in 15 g cocoa powder and whisk until incorporated. Gently fold in 200 g raspberries, leaving some whole and crushing a few for ribbons through the batter.

Bake
Pour batter into prepared pan and smooth the top. Bake for 25–30 minutes — the cake should be set at the edges and slightly soft in the center (a toothpick inserted may come out with a few moist crumbs). Remove from oven and cool completely in the pan on a wire rack. Chill for at least 2 hours to set (helps with slicing).

Release and finish
Run a knife around the springform sides, release the ring, and transfer cake to a serving board. Dust lightly with powdered sugar or a few fresh raspberries if desired.

Storage
Keep the cake refrigerated, covered, for up to 4 days. Bring to room temperature before serving for best texture.
Vanilla Bean Sugar

Combine 300 g granulated sugar and seeds scraped from 1 vanilla bean (or 1 tsp vanilla powder) in a bowl. Mix thoroughly to distribute the vanilla. Transfer to a small resealable bag or jar and let sit for at least 24 hours to infuse. Label the bag 'Vanilla Bean Sugar'.
Finishing & Assembly

Arrange items in the gift box with cushioning: place the wrapped mug on one side, the sealed bag of coffee on another, and nestle the vanilla bean sugar bag near the mug. Place the flourless raspberry cake (wrapped or in a small cake box) flat in the box. Arrange a small paper bag or clear cellophane sleeve containing 6 financiers and 4 cannelés (or packaged individually) in remaining space. Ensure nothing shifts — use extra shredded paper to fill gaps. Add the label/product card with brewing instructions and contents list on top.

Wrap the entire box in cellophane (optional) and tie with a ribbon. If shipping, ensure the box is sturdy and include cold packs for the cake if transit time requires refrigeration. Add handling instructions on the outside ("Perishable: refrigerate upon arrival" for the cake).

Final quality check: confirm all baked goods are cooled and properly packaged, the coffee is sealed, and the mug is protected. Close the box and affix the label.
