Sole fillets

Method

Prepare and sear sole

    Pat dry and season

    Rinse fillets briefly and pat completely dry with paper towels. Season both sides with 1 tsp salt and 1/2 tsp white pepper.

    Coat with cornstarch

    Lightly dust both sides of the fillets with 2 tablespoons cornstarch, shaking off excess. This helps create a delicate crust and thickens sauce slightly when finished.

    Heat a large nonstick or stainless skillet over medium-high heat until hot. Add 3 tablespoons vegetable oil and swirl. When oil shimmers, add the sole fillets in a single layer (work in two batches if necessary). Sear until golden and cooked through, about 2–3 minutes per side depending on thickness. Remove fillets to a warmed plate and tent loosely with foil.

Make chili bean sauce

    In the same skillet, lower heat to medium and remove excess oil leaving approximately 1 tablespoon. Add the sliced shallot and the white parts of the scallions; sauté 1–2 minutes until softened.

    Add 1 tablespoon minced garlic and 1 teaspoon minced ginger; stir for 20–30 seconds until fragrant but not browned.

    Stir in 2 tablespoons doubanjiang (spicy fermented chili bean paste). Cook the paste 30–45 seconds, stirring constantly to bloom the flavors and integrate with the aromatics.

    Add 1/2 cup chicken or fish stock, 1 tablespoon light soy sauce, 1 tablespoon oyster sauce, 1 teaspoon rice vinegar, and 1/2 teaspoon sugar. Stir to combine and bring to a gentle simmer.

    Mix the slurry: combine 1 teaspoon cornstarch with 1 tablespoon water until smooth. Slowly whisk the slurry into the simmering sauce. Cook 1–2 minutes until sauce thickens to a glossy, spoon-coating consistency. Taste and adjust seasoning — add a pinch of salt or 1/2 teaspoon sugar if too spicy or tangy.

    Remove from heat and stir in 1/2 teaspoon sesame oil for aroma.

Finish and serve

    Return the seared sole fillets to the skillet or place them on a serving platter. Spoon the chili bean sauce evenly over the fillets so they are lightly coated. If fillets cooled significantly, place skillet over low heat for 30–60 seconds to gently rewarm after saucing.

    Garnish with sliced green scallion parts, optional cilantro, and a sprinkle of toasted sesame seeds. Serve immediately with steamed rice or simple stir-fried greens.
