Prepare Brown Sugar Syrup

    Make syrup

    Combine 4 tbs brown sugar (or adjust to taste) and 4 tbs water in a small saucepan. Heat over medium, stirring until sugar dissolves and mixture just begins to simmer. Let simmer 1–2 minutes to thicken slightly, then remove from heat and let cool to room temperature. This yields roughly 6–8 tablespoons of syrup. Optionally, caramelize the sugar for 1–2 minutes before adding water for a deeper flavor.

Brew Strong Black Tea

    Boil water

    Bring 1000 ml water to a rolling boil in a kettle or pot.

    Steep tea

    Place 6 tsp loose Assam or Ceylon tea in a heatproof teapot or French press. Pour the boiling water over the leaves and steep for 5–6 minutes for a strong, full-bodied brew (5 minutes for slightly lighter, up to 6 for robust).

    Strain & concentrate

    Strain the tea leaves and measure out about 2 cups (480 ml) of the brewed tea for the recipe. If you brewed the full liter, reserve the rest for additional servings or dilute as desired. Optional: to intensify, reduce leftover brew on low heat by 5–8 minutes until concentrated; cool before use.

Assemble Milk Tea

    Combine milk and cream

    In a clean pitcher, whisk together 2 cups whole milk, 1/2 cup half-and-half, and 2 tablespoons non-dairy creamer (if using) until smooth and slightly frothy. Add a pinch of salt to amplify flavor.

    Sweeten

    Stir in 4 tablespoons brown sugar syrup (or honey) and 1/2 teaspoon vanilla extract into the milk mixture until fully incorporated. Taste and adjust sweetness as desired.

    Mix tea and milk

    Pour 2 cups (480 ml) of the hot brewed tea into the sweetened milk mixture slowly while whisking to combine. This prevents curdling and ensures even blending. If the tea is still hot and you prefer iced, allow mixture to cool to warm, then refrigerate or add ice as below.

    Hot serving (optional)

    For hot milk tea, gently reheat the assembled milk tea on low just until warm (do not boil). Pour into pre-warmed cups. Add cooked tapioca pearls at the bottom of each cup if desired.

    To serve iced, add 1 cup ice cubes to a large pitcher or divide between glasses. Pour the milk tea over the ice. If using cooked tapioca pearls, spoon about 1/4 cup pearls into each serving glass before adding ice and tea. Stir briefly and serve with a wide straw.

    Storage & notes

    Store leftover brewed tea and milk blend separately in the refrigerator up to 48 hours. Recombine before serving. If pearls become hard, warm them in a little syrup before serving. Adjust sweetness, milk ratio, or tea strength to match preference.
