Green Bean Jelly (agar-based)

    Prep green beans

    Rinse and trim the green beans. Cut into 1/2–3/4-inch (1.5–2 cm) pieces. Measure 2 cups packed.

    Cook beans until soft

    Place the cut beans and 3 cups water in a medium saucepan. Bring to a simmer over medium heat, then reduce to medium-low and simmer gently until the beans are very soft and starting to break down, about 15–20 minutes.

    Blend and strain

    Use an immersion blender or transfer to a countertop blender and puree the beans and cooking liquid until smooth. Pour the puree through a fine-mesh sieve or chinois into a clean saucepan, pressing with a spatula to extract as much liquid and smooth puree as possible. You should have roughly 2 to 2 1/2 cups of strained green bean liquid/puree.

    Dissolve agar and sugar

    Measure the strained green bean liquid back into the saucepan. Add 2 tbs agar-agar powder, 2 tbs granulated sugar, and 1 tsp salt. Whisk to combine. Let sit for 5 minutes to hydrate the agar.

    Cook until agar is dissolved

    Bring the mixture to a boil over medium-high heat, stirring constantly. Once it reaches a gentle boil, reduce heat and simmer for 2–3 minutes while continuing to stir, ensuring the agar and sugar are fully dissolved and there are no gritty bits. Total gentle boil time after reaching boil should be about 2–3 minutes to activate agar.

    Adjust seasoning & pour

    Taste carefully (it will be hot) and adjust salt or sugar if desired. Pour the hot green bean jelly mixture into a shallow 8x8-inch (20x20 cm) pan or individual molds. Tap the pan gently to remove air bubbles.

    Chill to set

    Allow to cool to room temperature (15–20 minutes), then refrigerate until fully set, minimum 1 hour, preferably 2 hours. The jelly should be firm and sliceable.

    Cut for serving

    Run a thin knife around the edges if needed and unmold or invert the pan. Cut the jelly into 1-inch (2.5 cm) squares or desired shapes. Place on serving plates.

Brown Sugar Syrup & Garnish

    Make brown sugar syrup

    Combine 3 tbs dark brown sugar and 4 tbs water in a small saucepan. Warm over medium heat, stirring until the sugar dissolves. Bring to a gentle simmer and cook 2–3 minutes until slightly thickened. If using, stir in 1 tsp light corn syrup or honey for added shine. Remove from heat and let cool slightly.

    Finish syrup

    Taste the syrup and, if it tastes flat, add a pinch of salt or a few drops of lemon juice to brighten. If you like a runnier syrup, add 1–2 tbs warm water to reach desired consistency. Keep warm or at room temperature.

    Plate and garnish

    Spoon a thin ribbon of warm brown sugar syrup over the cut green bean jelly squares. Garnish with a light sprinkle of toasted sesame seeds and 1/2 tsp grated lime or lemon zest for brightness, if using. Serve chilled or at cool room temperature.
