    Clean and slice mushrooms

    Wipe mushrooms with a damp cloth or quickly rinse and pat dry. Trim stems if needed. Slice larger black mushrooms or shiitakes into 1/4-inch slices; leave small caps whole or halved so pieces are bite-sized.

    Marinate and cook mushrooms

    In a bowl, combine 2 tbs olive oil, 1 tbs soy sauce, 1 tbs balsamic vinegar and 1 tsp minced garlic. Add the sliced mushrooms and toss to coat. Let sit 10 minutes to absorb flavor. Heat a large skillet over medium-high heat. Add the marinated mushrooms and cook, stirring occasionally, until they are tender and lightly caramelized, about 6–8 minutes. Remove from heat and let cool slightly.

    Prepare vegetables and toppings

    While mushrooms cook, thinly slice the red onion into half-moons and soak in cold water for 5 minutes if you want milder onion flavor; drain well. Slice the cucumber into half-moons or matchsticks. Halve the cherry tomatoes. Roughly chop the parsley. Toast the walnuts in a dry skillet over medium heat, stirring, until fragrant and slightly browned, 3–4 minutes; cool slightly and chop coarsely if large.

    Assemble salad base

    Place 6 cups mixed salad greens into a large serving bowl or individual plates. Scatter the cucumber, cherry tomatoes, and drained red onion over the greens. Add chopped parsley and toasted walnuts. If using, sprinkle crumbled feta or goat cheese.

    Add mushrooms

    Spoon the warm (or room-temperature) cooked mushrooms over the assembled greens and vegetables so their flavor melds with the salad.

Marinade & Dressing

    Make the dressing: In a small bowl or jar, combine 3 tbs olive oil, 1.5 tbs fresh lemon juice, 1 tsp Dijon mustard, 1 tsp honey or maple syrup, 1 tsp rice wine vinegar, 1 tsp salt and 1/2 tsp black pepper. Whisk or shake vigorously until emulsified. Taste and adjust seasoning—add a pinch more salt or a little more lemon if desired.

    Dress the salad: Right before serving, drizzle the dressing over the assembled salad and mushrooms (start with about half the dressing and toss gently; add more to taste). Serve immediately so greens remain crisp while mushrooms still carry warm flavor.

    Make-ahead and service notes: Mushrooms can be cooked and marinated up to 24 hours ahead and refrigerated; reheat briefly or serve chilled. Dressing can be prepared up to 48 hours ahead and stored refrigerated; shake before using. Keep toasted walnuts separate until serving if preparing far in advance to preserve crunch.
