Ribeye Steak

    Prepare the Steak

    Take the ribeye steaks out of the refrigerator and let them sit at room temperature for about 30 minutes. This helps them cook evenly.

    Season the Steak

    Pat the steaks dry with paper towels. Season generously with salt and black pepper on both sides.

    Heat the Pan

    In a large skillet, heat the olive oil over medium-high heat until it shimmers.

    Cook the Steak

    Add the steaks to the skillet. Cook for 4-5 minutes on the first side without moving them to create a nice crust.

    Add Aromatics

    Flip the steaks and add the garlic cloves and rosemary to the pan. Cook for an additional 3-4 minutes for medium-rare, spooning the oil over the steaks.

    Rest the Steak

    Remove the steaks from the skillet and let them rest on a cutting board for at least 5 minutes before slicing.

Mashed Potatoes

    Prepare the Potatoes

    Peel the potatoes and cut them into quarters. Place them in a large pot and cover with cold water.

    Boil the Potatoes

    Bring the water to a boil over high heat. Once boiling, reduce heat to medium and cook until potatoes are fork-tender, about 15-20 minutes.

    Drain and Mash

    Drain the cooked potatoes and return them to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy.

    Serve

    Spoon the mashed potatoes onto plates and serve alongside the ribeye steaks.
