Chocolate Mousse

Melt the Chocolate
In a heatproof bowl, place 200g of dark chocolate. Melt it over a pot of simmering water (double boiler method) or in the microwave in short bursts, stirring until smooth. Let it cool slightly.

Prepare Gelatin
In a small bowl, sprinkle 1 tsp of gelatin powder over 2 tbsp of cold water. Let it sit for about 5 minutes to soften.

Whip Cream
In a separate bowl, whip 300ml of heavy cream until soft peaks form. Be careful not to overwhip.

Add Melted Chocolate
Gradually add the melted chocolate to the egg yolk mixture, stirring to combine.

Dissolve Gelatin
Gently heat the gelatin mixture until dissolved, then mix it into the chocolate mixture.

Fold in Whipped Cream
Carefully fold the whipped cream into the chocolate mixture until fully incorporated. Set aside.
Chocolate Shell

Melt Chocolate for Shell
Melt 100g of dark chocolate using the double boiler method or in the microwave until smooth.

Coat Molds
Using a pastry brush, coat the inside of silicone molds with the melted chocolate. Ensure an even layer. Refrigerate until set.

Fill Shells
Once the chocolate has set, carefully fill each shell with the prepared mousse. Return to the fridge to firm up.
Flourless Chocolate Cake

Preheat Oven
Preheat your oven to 180°C (350°F). Grease a round cake pan and line the bottom with parchment paper.

Melt Chocolate and Butter
In a heatproof bowl, combine 150g of dark chocolate and 100g of butter. Melt together over simmering water or in the microwave, stirring until smooth.

Add Cocoa Powder
Sift in 30g cocoa powder and fold gently until just combined.

Bake the Cake
Pour the batter into the prepared cake pan and smooth the top. Bake for 25-30 minutes or until a toothpick comes out with a few moist crumbs.

Cool the Cake
Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
