Main Ingredients

Method

Preparation

  1. 1

    Clean the Snails

If using live snails, soak them in water with a little salt for a couple of hours to purge them. Rinse them thoroughly under cold water.

  2. 2

    Prepare the Garlic Butter

Melt the butter in a small saucepan over low heat. Mince the garlic cloves and add them to the melted butter. Cook gently for about 1-2 minutes until fragrant, being careful not to brown the garlic.

  3. 3

    Add Herbs and Seasoning

Finely chop the fresh parsley and stir it into the garlic butter. Add the salt, black pepper, and lemon juice, mixing well to combine.

Assembly

  1. 4

    Fill the Snail Shells

Using a small spoon or a piping bag, fill each snail shell with the garlic butter mixture. If using canned snails, place them directly in a baking dish and fill with the garlic butter.

  2. 5

    Bake the Snails

Preheat your oven to 200°C (400°F). Place the filled snail shells on a baking tray or in a baking dish. Bake in the preheated oven for about 10-15 minutes, until the butter is bubbling and the snails are heated through.

  3. 6

    Serve

Remove from the oven and serve immediately. You can serve the escargots in their shells with crusty bread on the side to soak up the garlic butter.
