Chocolate Mousse Preparation

    Melt the Chocolate

    Chop the dark chocolate into small pieces and place it in a heatproof bowl. Melt the chocolate using a double boiler or microwave until smooth. Set aside to cool slightly.

    Whip the Cream

    In a large bowl, whip 300 ml of heavy cream until it reaches soft peaks. Be careful not to overwhip. Set aside.

    Prepare the Egg Mixture

    In a separate bowl, whisk together the egg yolks, granulated sugar, vanilla extract, and salt until the mixture is pale and slightly thickened.

    Combine Mixtures

    Slowly add the melted chocolate into the egg mixture, stirring continuously until fully combined. Then gently fold in the whipped cream in three additions, being careful not to deflate the mixture.

    Chill the Mousse

    Once everything is combined, transfer the mousse into serving glasses or bowls and refrigerate for at least 2 hours to set.

Whipped Cream Topping Preparation

    Whip the Cream

    In a separate bowl, whip the 150 ml of heavy cream until it begins to thicken. Gradually add the powdered sugar and vanilla extract, continuing to whip until stiff peaks form.

    Top the Mousse

    Once the mousse is set, remove it from the refrigerator and dollop or pipe the whipped cream on top of each serving. Optionally, garnish with chocolate shavings or berries.
