Crust Preparation

Make the Crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs and granulated sugar. Pour in the melted butter and mix until the mixture resembles wet sand.

Press the crumb mixture into the bottom of a 9-inch springform pan, ensuring it's packed tightly and evenly. Bake for 8-10 minutes or until lightly golden. Remove from the oven and let cool.

Prepare the Filling
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

Gradually add the granulated sugar and mix until well combined. Add the sour cream and vanilla extract, mixing until smooth.

Add the eggs one at a time, mixing on low speed after each addition until just combined. Be careful not to overmix.

Pour the cream cheese mixture over the cooled crust in the springform pan.
Baking

Bake the Cheesecake
Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and crack the door open, allowing the cheesecake to cool gradually for about 1 hour.

Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight.
Topping Preparation

Prepare the Topping
Just before serving, wash and dry the fresh berries. In a small bowl, toss the berries with powdered sugar to lightly coat.

Gently place the berries on top of the chilled cheesecake.
