Method

Preparation

  1. 1

    Prepare the Blackcurrants

Rinse the blackcurrants under cold water and remove any stems or leaves. Pat them dry with a clean kitchen towel.

  2. 2

    Macerate the Blackcurrants

In a large glass jar or container, add the prepared blackcurrants and pour in the vodka. Seal the container tightly and let it sit in a cool, dark place for about 2 weeks. Shake the jar gently every few days to help the flavors infuse.

Sweetening

  1. 3

    Strain the Mixture

After 2 weeks, strain the blackcurrant and vodka mixture through a fine mesh sieve or cheesecloth into a clean bottle or jar, discarding the solids.

  2. 4

    Prepare the Simple Syrup

In a small saucepan, combine the sugar and water. Heat over medium heat, stirring until the sugar is fully dissolved. Allow the syrup to cool.

  3. 5

    Combine the Syrup and Infusion

Once the simple syrup has cooled, mix it with the strained blackcurrant infusion until well combined. Taste and adjust sweetness if necessary by adding more syrup.

Bottling

  1. 6

    Bottle the Liqueur

Using a funnel, pour the finished cassis liqueur into clean, sterilized bottles. Seal the bottles tightly and store them in a cool, dark place.

  2. 7

    Let it Mature

For the best flavor, allow the liqueur to mature for at least another month before consuming. It can be enjoyed on its own or used in cocktails.
