Thaw and prepare

Remove puff pastry sheets from the freezer and thaw in the refrigerator for 30–60 minutes according to package instructions until pliable but still cold. Preheat oven to 400°F (200°C). Line two baking sheets with parchment paper.

Lightly flour a clean work surface with 1–2 tablespoons of the all-purpose flour. Unfold one puff pastry sheet carefully and gently roll it once or twice with a rolling pin to smooth seams and create an even thickness about 1/8 inch (3 mm). Repeat with the second sheet if using both for more pieces.

Trim the edges with a sharp knife or pizza cutter so each sheet is a neat rectangle (about 9 x 12 inches each depending on brand). If you want uniform small pieces, cut each sheet into 6 equal rectangles (3 x 2 grid) for a total of 12 pastries; or cut into 4 larger rectangles for 8 pastries.

In a small bowl combine the granulated sugar and ground cinnamon (if using). Mix thoroughly so the cinnamon is evenly distributed.

Reserve about 1 tablespoon of the sugar mixture for sprinkling after baking (optional). This keeps a bright crunchy finish on top.

Make egg wash

Crack the egg into a small bowl, add 1 teaspoon cold water, and whisk until smooth and slightly frothy.

Lightly brush the surface of each cut pastry rectangle with melted butter using a pastry brush. Then lightly brush with egg wash (or only egg wash if preferred) — the butter gives extra browning and flavor, the egg wash helps sugar adhere and creates shine.

Generously sprinkle the sugar-cinnamon mixture over each brushed pastry piece, pressing lightly with fingertips so the sugar adheres. Shake off any heavy excess back into the bowl for reuse.

Place the prepared pastries on the lined baking sheets, leaving about 1 inch (2.5 cm) between pieces to allow puffing. If desired, use a fork to dock (prick) the center of each rectangle lightly to control puffing and leave edges higher for a rim.

Bake in the preheated 400°F (200°C) oven on the center rack for 12–16 minutes for small pieces (12 pastries) or 15–20 minutes for larger pieces (8 pastries), until the pastry is fully risen, golden brown and caramelized where the sugar melted. Rotate sheets halfway through baking for even color.

Remove from oven and, if reserved sugar was set aside, immediately sprinkle that small reserved amount on top while warm for extra sparkle. Let the pastries cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely (or serve warm).
