Prepare avocados

Halve the avocados, remove the pits and scoop flesh into a medium bowl.

Season and smash

Add the lime juice, fine sea salt and freshly ground black pepper to the bowl. Using a fork or potato masher, gently smash the avocado to a chunky texture—leave some small pieces for body. Drizzle in the extra-virgin olive oil and fold once to combine. Taste and adjust salt or lime as needed.

Prepare durian

If not already removed from the shell, take 100 g of durian flesh and lightly break it into small pieces with a fork. Durian should be soft; avoid pureeing completely—aim for small chunky pieces that will meld with the avocado.

Combine aromatics

Fold the durian pieces into the smashed avocado. Add the finely chopped red onion, chopped cilantro (if using), and finely chopped red chili (if using) to the bowl. If you prefer a slight sweetness to balance the pungency of durian, stir in 1 tsp light honey or agave. Mix gently until ingredients are evenly distributed, taking care not to overwork the durian pieces.

Adjust seasoning

Taste the mixture and add additional salt, lime juice, or a small pinch of black pepper as needed. The durian will add richness and aroma—balance it with brightness from lime and salt.

To Serve

Lay toasted bread slices or tortilla chips on a serving platter. Spoon the smashed avocado with durian onto each slice or into a communal bowl for dipping.
