Make simple syrup

Combine 1 cup water and 3 tablespoons granulated sugar in a small saucepan. Bring to a gentle simmer over medium heat, stirring until the sugar dissolves. Remove from heat and let cool to room temperature.

Prepare pulp

If using whole passion fruits, halve and scoop out pulp and seeds until you have 2 cups. If using frozen pulp, thaw and measure 2 cups.

Combine and balance

In a blender or food processor, combine the 2 cups passion fruit pulp, cooled simple syrup, 2 tablespoons fresh lime juice and a pinch of salt. Blend on high for 20–30 seconds until smooth and evenly mixed. Taste and adjust: add up to 1 tablespoon more sugar or up to 1 tablespoon more lime juice as needed to balance sweetness and acidity.

Strain (optional)

For a seedless sorbet, pass the blended mixture through a fine-mesh sieve into a bowl, pressing with a spatula to extract as much liquid as possible. Discard seeds and solids. If you prefer seeds, skip this step.

Chill

Cover the mixture and chill in the refrigerator for at least 1 hour, or until thoroughly cold (2–3 hours preferred).

Freeze

Pour the chilled passion fruit mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve sorbet consistency (typically 20–30 minutes). Transfer to a freezer-safe container, smooth the top, cover, and freeze for at least 2 hours to firm up.

No-ice-cream-maker method

Pour the chilled mixture into a shallow, freezer-safe pan. Freeze for 30–45 minutes, then whisk vigorously to break up ice crystals. Repeat every 30–45 minutes for 3–4 cycles until smooth and scoopable, then freeze 1–2 hours to firm.

Combine 1 cup passion fruit pulp, 2 tablespoons sugar, and 2 tablespoons water in a small saucepan. Warm gently over low heat, stirring, just until the sugar dissolves and the mixture is fragrant (do not boil). Remove from heat and cool slightly. For a seedless coulis, strain through a fine-mesh sieve; otherwise leave seeds for texture. Chill before serving.

Scoop sorbet into chilled bowls or glasses. Spoon a little passion fruit coulis over each serving if using. Garnish with lime zest, a sprinkle of toasted coconut flakes, and a few mint leaves. Serve immediately.
