Prepare baguette
Preheat oven to 350°F (175°C). With a serrated knife, split the baguette lengthwise, leaving a small hinge if you prefer a pocket-style sandwich. Lightly toast the open baguette in the oven for 4–6 minutes until just crisp but not hard.
Combine the softened butter and Dijon mustard (if using). Spread evenly on both cut surfaces of the warmed baguette.

Beat eggs
In a small bowl, whisk together the eggs, milk, salt, and black pepper until combined and slightly frothy. This yields a tender scrambled/tender folded egg texture suitable for a sandwich.

Cook bacon
While the eggs are cooking or beforehand, place bacon strips in a cold skillet and cook over medium heat, turning occasionally, until crisp or to your liking (about 6–8 minutes). Transfer to paper towels to drain and blot excess fat. If you prefer quicker cooking, you can bake bacon on a sheet at 400°F (200°C) for 12–15 minutes.
Assembly & Melt
Lay the warmed ham slices on the bottom half of the buttered baguette, slightly overlapping.
Place the cooked bacon strips on top of the ham.
Top the eggs with the sliced cheddar cheese. If you like extra melt, place the assembled open sandwich under a broiler or in the 350°F oven for 1–2 minutes just until the cheese softens and begins to melt (watch closely to avoid burning the bread).
