    About 30 minutes before frying, whisk together 2 cups all-purpose flour and 0.25 cup cornstarch in a large shallow bowl or rimmed baking sheet. Add 1.5 tsp paprika, 1 tsp garlic powder, 1 tsp onion powder, 0.5 tsp dried oregano, 0.5 tsp dried thyme, 0.5 tsp white pepper, 0.25 tsp cayenne, and 2 tsp kosher salt. Mix thoroughly to evenly distribute spices.

    If using the egg wash for extra adhesion, whisk 1 large egg with 2 tbs milk in a shallow bowl. Place seasoned flour in one container and the egg wash in another (or just flour and the buttermilk-soaked chicken for single-dip method).
