Bread Preparation

Activate the Yeast

In a small bowl, combine warm water and active dry yeast. Let it sit for about 5-10 minutes until frothy.

Mix the Dough

In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the activated yeast mixture and olive oil. Stir until a cohesive dough forms.

Knead the Dough

Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic.

First Rise

Place the kneaded dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape the Baguette

Punch down the risen dough and transfer it to a floured surface. Divide the dough into 4 equal pieces and shape each piece into a small baguette.

Second Rise

Place the shaped baguettes on a baking sheet lined with parchment paper. Cover and let them rise for another 30 minutes.

Preheat Oven

Preheat your oven to 450°F (232°C).

Bake the Baguettes

Make slashes on the top of each baguette with a sharp knife. Bake in the oven for about 20-25 minutes until golden brown.

Serve

Remove from the oven and let cool slightly. Serve warm with PEI butter and sprinkle with fleur de sel to taste.
