Sorbet Preparation

Prepare the Fruit

Wash and chop the seasonal fruits into smaller pieces, removing any pits or stems. If using berries, leave them whole.

Make the Simple Syrup

In a saucepan, combine water and granulated sugar. Heat over medium heat, stirring until the sugar dissolves completely. Remove from heat and let cool.

Blend the Ingredients

In a blender, combine the chopped fruits, cooled simple syrup, lemon juice, and Okanagan ice wine. Blend until smooth and well combined.

Chill the Mixture

Transfer the blended mixture to a bowl and refrigerate for at least 1 hour or until thoroughly chilled.

Churn the Sorbet

Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions, usually about 20-30 minutes, until it reaches a soft-serve consistency.

Freeze the Sorbet

Transfer the churned sorbet to an airtight container and freeze for at least 4 hours or until firm.

Serve

Scoop the sorbet into bowls and drizzle with additional Okanagan ice wine if desired. Enjoy!
