Preparing the Sablefish

Marinate the Fish

In a bowl, combine sake, soy sauce, and salt. Add sablefish fillets and marinate for at least 30 minutes.

Cook the Fish

Preheat the oven to 375°F (190°C). Place the marinated sablefish on a baking sheet and bake for 15-20 minutes until cooked through and flaky.

Making the Broth

Prepare the Broth

In a large pot, sauté chorizo until browned. Add garlic and ginger, and cook until fragrant. Pour in vegetable broth and yuzu juice, and bring to a simmer.

Add Vegetables

Add Tokyo turnips, carrots, and asparagus to the broth. Simmer for about 10 minutes until vegetables are tender.

Serving

Plate the Dish

In serving bowls, ladle the chorizo yuzu broth with vegetables. Top with a piece of baked sablefish and garnish with chopped scallions.
