Preparation of Lamb Saddle

Prepare the Herb Crust

In a bowl, mix together minced garlic, chopped fresh herbs, olive oil, salt, and black pepper to create a paste.

Crust the Lamb

Rub the herb paste all over the lamb saddle, ensuring it is well coated. Let it marinate for at least 30 minutes.

Roast the Lamb

Preheat the oven to 200°C (400°F). Place the lamb in a roasting pan and roast for about 25-30 minutes or until it reaches your desired doneness. Let it rest before slicing.

Preparation of Confit Tomatoes

Prepare Tomatoes

Preheat the oven to 120°C (250°F). In a baking dish, combine cherry tomatoes, whole garlic cloves, thyme, olive oil, and salt.

Confit the Tomatoes

Bake in the oven for about 1.5 to 2 hours until the tomatoes are soft and bursting, then remove and set aside.

Preparation of Cauliflower Purée

Cook Cauliflower

Steam cauliflower florets until tender, about 10-15 minutes.

Blend Purée

In a blender, combine steamed cauliflower, butter, heavy cream, salt, and pepper. Blend until smooth and creamy.

Preparation of Mint Jus

Cook the Jus

In a saucepan, combine lamb stock, red wine, salt, and pepper. Bring to a simmer and reduce by half.

Add Mint

Remove from heat and stir in chopped mint leaves. Let it steep for a few minutes before straining.
