Salmon fillet with green peppercorn sauce
In a saucepan, heat the olive oil and 2 tablespoons of butter over medium heat. Add the green peppercorns and sauté for 1-2 minutes until fragrant.
Pour in the white wine and bring to a boil. Let it simmer for about 5 minutes until reduced by half.
Stir in the heavy cream and season with salt and black pepper. Cook for another 5 minutes until the sauce thickens slightly. Remove from heat and keep warm.
Heat the remaining butter in a skillet over medium-high heat. Season the salmon fillets with salt and black pepper on both sides. Place the fillets in the skillet and cook for about 4-5 minutes per side, or until cooked to your liking.
Plate the cooked salmon fillets and drizzle the green peppercorn sauce over the top. Garnish with fresh parsley and serve immediately.
