Preparing the Potatoes
Peel the Russet potatoes and cut them into evenly sized sticks, about 1/4 inch thick. Soak the potato sticks in cold water for at least 30 minutes to remove excess starch.
Drying the Potatoes
After soaking, drain the potatoes and pat them dry with paper towels to remove as much moisture as possible.
Heating the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Frying the Potatoes
Carefully add a small batch of potato sticks to the hot oil, making sure not to overcrowd the pot. Fry for about 5-7 minutes or until they turn golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
Seasoning
While the fries are still hot, sprinkle with salt to taste. Repeat the frying process with the remaining potato sticks.
Serving
Serve the crispy fries hot with ketchup on the side for dipping.
