Yaupon tea base
Brew concentrated yaupon
Bring 4 cups water to a near boil in a medium saucepan. Remove from heat and add 6 tsp dried yaupon leaves (or 6 tea bags). Cover and steep 10–12 minutes for a concentrated, slightly toasted flavor. Strain leaves (or remove tea bags) through a fine mesh sieve or cheesecloth into a heatproof container. Press gently on leaves to extract liquid but avoid squeezing bitter solids.
Chill the brewed yaupon: allow the tea to cool at room temperature for 15–20 minutes, then transfer to the refrigerator until cold (about 30–45 minutes). You can speed this by transferring to an ice bath.

Make sugar syrup
Combine 1 cup sugar and 1 cup water in a small saucepan. Warm over medium heat, stirring occasionally, until sugar fully dissolves and the mixture is clear (do not boil vigorously). Remove from heat and cool to room temperature.
If using corn syrup or glucose for a smoother texture, stir 1 tablespoon into the warm syrup until incorporated. Chill syrup before combining with tea.

In a bowl or large measuring cup, combine the chilled yaupon tea and the chilled simple syrup. Add 3 tablespoons fresh lemon juice, 1 tablespoon lemon zest, and 1 teaspoon fine sea salt. Taste and adjust: the final mix should be bright and slightly tart—if too tart, add up to 1 tablespoon more syrup; if too sweet, add a teaspoon or two more lemon juice.
Strain the mixture through a fine mesh sieve into a shallow metal bowl to remove any zest bits and ensure a smooth sorbet base.

Churn (preferred)
If you have an ice cream maker: chill the sorbet base until very cold (at least 1 hour). Churn according to the manufacturer's instructions (typically 20–30 minutes) until it reaches a soft-sorbet consistency. Transfer to an airtight container and freeze at least 2 hours to firm up.
No churn method
Pour the strained sorbet base into a shallow, freezer-safe metal or glass pan. Freeze for 30–45 minutes, then remove and vigorously whisk or use a fork to break up ice crystals. Return to freezer and repeat every 30 minutes for 2–3 cycles until smooth and scoopable, then freeze 1–2 hours to set.
Before serving, let sorbet rest at room temperature for 5–8 minutes to soften slightly, then scoop. Garnish with a light sprinkle of lemon zest if desired.
