Chill glass

Place a coupe or chilled martini glass in the freezer or fill it with ice and cold water to chill while you prepare the cocktail (about 2–3 minutes).

Prepare mixing glass

Fill a mixing glass or cocktail shaker halfway with large ice cubes to ensure proper dilution and chilling.

Measure and combine

Pour 2 oz gin, 1 oz sweet vermouth, and 1/4 oz Fernet-Vallet into the mixing glass. If using, add 1 dash of bitters. The Fernet should be the final pour so you can judge aroma.

Stir

Stir gently with a bar spoon for 30–45 seconds (about 20–30 full turns) until the mixture is well chilled and slightly diluted. Aim for a cold, silky texture rather than aggressive shaking.

Prepare garnish

While stirring, cut a fresh strip of orange peel approximately 1/2" x 2". Express the oils by holding it over the chilled glass and giving it a firm twist, then rub the peel around the rim if desired.

Strain and serve

Discard the ice/water from the chilled glass. Double-strain the cocktail into the chilled coupe or martini glass using a Hawthorne or julep strainer (and fine mesh if needed) to catch any small ice chips.

Garnish

Garnish with the expressed orange twist placed on the rim or dropped into the drink. Serve immediately.

Tasting note

The Hanky Panky is a gin-forward Manhattan variation: the sweet vermouth rounds the gin while the Fernet-Vallet adds a bold bitter, minty-anise finish. Adjust Fernet between 1/8–1/2 oz to taste.
