Prepare Oysters

    Chill and arrange

    Place crushed ice in a wide, shallow serving platter or individual plates to create a stable bed for the oyster shells. Keep the platter chilled in the refrigerator while you prepare the mignonette so oysters stay cold.

    Shuck oysters

    Using an oyster knife and glove, hold each oyster cup-side down on a towel. Insert the knife at the hinge, twist to pop, run the blade under the top shell to release the muscle, discard top shell. Slide the blade under the oyster to free it from the bottom shell, keeping the oyster level to preserve its liquor. Place each oyster on the bed of crushed ice in its bottom shell. Reserve lemon wedges alongside.

Make Apple Mignonette

    Prepare apple and shallot

    Core and finely dice half a Granny Smith apple into very small, uniform pieces (about 3–4 mm). Mince one shallot very finely. Transfer both to a medium mixing bowl.

    Combine vinegars and honey

    Add 3 tsp red wine vinegar, 1 tsp champagne vinegar and 1/2 tsp honey to the bowl. Stir briefly to dissolve the honey into the vinegars.

    Emulsify and season

    Whisk in 1 tsp extra-virgin olive oil until the mixture is slightly glossy. Season with 1/4 tsp sea salt and 1/4 tsp freshly ground black pepper. Taste and adjust vinegar/honey balance: if too sharp add a touch more honey (up to 1/2 tsp total) or if too sweet add 1/2 tsp more red wine vinegar.

    Finish with chives

    Fold in 1 tbsp thinly sliced fresh chives. Let the mignonette rest 5–10 minutes at cool room temperature to allow flavors to marry; if making ahead, refrigerate for up to 1 hour and bring back to cool before serving.

Assemble and Serve

    Using a small spoon, place about 1 teaspoon of apple mignonette onto each oyster, spreading gently so the oyster liquor mixes with the dressing. Alternatively, serve the mignonette in a small bowl alongside and allow guests to spoon it over each oyster.

    Garnish each oyster with a tiny pinch of extra chives if desired and serve immediately with lemon wedges for squeezing. Instruct guests to eat oysters straight from the shell, optionally adding a squeeze of lemon.

    Discard any oysters that do not smell briny and fresh. Keep any leftover mignonette refrigerated and use within 24 hours.
