Prepare the meat

Place the ground chuck into a large bowl. Add the grated onion, Worcestershire sauce, garlic powder, kosher salt, and freshly ground black pepper. If the mix feels very dry, add the cold water to help bind. Gently combine with your hands or a spatula until ingredients are evenly distributed—do not overwork the meat to avoid a dense burger.

Form patties

Divide the mixture into two equal portions (about 8 oz each). Shape each portion into a loose ball, then press into a patty about 3/4 to 1 inch thick with a slight dimple in the center (the dimple prevents puffing while cooking). Refrigerate patties on a tray for 10–15 minutes to help them hold shape.

Mix the softened butter with the chopped rosemary (or thyme) and coarse black pepper. Keep at room temperature until ready to finish the cooked patties.

Prep toppings

While patties rest in the fridge, slice the tomato and onion, wash and dry lettuce leaves, and have pickles ready. Split the buns and spread mayonnaise on the bottom halves and Dijon mustard on the top halves (or as preferred).

Toast buns

Heat a skillet or griddle over medium heat and add 1 tsp neutral oil. Place bun cut-sides down and toast until golden brown, about 1–2 minutes. Remove and set aside.

Cooking & Finishing

Cook patties

Preheat a heavy skillet, cast-iron pan, or griddle over medium-high heat until very hot (a drop of water should sizzle and evaporate). Add the high-heat oil and spread. Place patties on the surface and cook without moving for 3–4 minutes to develop a sear. Flip once and cook 3–4 minutes more for medium (internal temperature ~135–140°F / 57–60°C). Adjust time for desired doneness.

Add cheese and butter topping

In the final minute of cooking, place a slice of cheese on each patty and cover the pan briefly with a lid or a piece of foil to melt. Immediately after removing patties from the pan, spoon the herbed butter (about 1/2 tbs per patty) over the top so it melts into the burger, giving it a steak-like finish.

Rest

Let cooked patties rest 2 minutes on a plate loosely tented with foil to redistribute juices.

Assemble

Place the bottom bun with mayonnaise, add lettuce, the rested patty with melted cheese and herbed butter, then tomato slices, red onion, pickles, and top bun with mustard. Press gently and serve immediately.
