Method
Make Simple Syrup (if using)
Small-batch simple syrup
Combine 1/4 cup granulated sugar and 1/4 cup water in a small saucepan. Heat over medium, stirring occasionally, until sugar dissolves and the mixture is clear. Remove from heat and cool to room temperature. Transfer to a jar and refrigerate. Makes about 1/2 cup; use 2 tablespoons per soda.
Assemble Soda
Select your flavor approach: use 2 tbs of simple syrup for a classic sweet soda base; or 2 tbs fruit puree/juice for a fruit soda; or combine 1 tbs simple syrup + 1 tbs fresh citrus juice for a bright citrus soda. If using bitters, add 1–2 dashes to deepen flavor.
Fill a tall glass with 1 cup of ice cubes.
Add the chosen syrups/juices/bitters to the glass directly on the ice.
Pour 2 cups of chilled club soda or sparkling water over the ice and syrup. Pour gently to preserve carbonation.
Stir gently with a long spoon 4–6 times to integrate syrup and soda without flattening the bubbles.
Taste and adjust: if too sweet, add a splash more club soda; if too tart, add up to 1 tbs simple syrup; if thin, add another tablespoon of fruit puree or syrup.
Garnish with a mint sprig and a citrus wheel on the rim or floated on top. Serve immediately while fizzy.
