Prepare Muffins and Protein
Toast and warm
Split the English muffins and toast them until golden and crisp (about 2–3 minutes in a toaster or under a broiler). While toasting, spread 1 tbs butter on the cut face of each muffin half to lightly melt and flavor.
Heat protein
In a small skillet over medium heat, add the bacon or ham and warm for 2–3 minutes until heated and slightly crisp at edges. Remove and keep warm on a plate.
Make Egg Mixture
Crack the 4 large eggs into a medium bowl. Add 2 tbs milk, 1 tsp salt, 1/2 tsp black pepper and 1 tsp hot sauce (if using). Whisk briskly until yolks and whites are fully combined and lightly frothy, about 30 seconds. Stir in the minced shallot and chopped chives.
Cook the Eggs
Scrambled-style folded eggs
Heat 1 tsp olive oil and the remaining 1 tbs butter in a nonstick skillet over medium-low heat until butter foams but doesn't brown. Pour in the egg mixture and let it sit undisturbed for 10–15 seconds. Using a spatula, gently pull the eggs from the edges toward the center, allowing uncooked egg to flow out. Continue folding every 10–15 seconds until curds are soft and slightly runny — total cook time ~2–3 minutes. Remove immediately; residual heat will finish them. Taste and adjust salt and pepper if needed.
Form egg rounds (optional for sandwich fit)
If you prefer neatly shaped eggs to match the muffin, transfer the scrambled eggs into a round 3–3.5 inch ring mold or use a cleaned tuna can (both ends removed) placed in the skillet before pouring eggs. Cook as above and press gently to form a compact round. Remove the ring and slide the egg round onto a plate.
Assemble Sandwiches
Place a cheddar slice onto the bottom half of each buttered muffin while still warm so it begins to melt. Top cheese with the warm eggs (or egg rounds), then arrange two slices of warmed bacon or ham on top of the eggs. Spread mayonnaise and Dijon mustard on the inside of the top muffin halves (or brush with the remaining butter if you prefer). Close the sandwich, pressing gently so the cheese melts fully.
If you want the cheese extra melty, place the assembled sandwich on a skillet over low heat, cover with a lid for 30–45 seconds, then remove and serve.
